Profile on The Cove Restaurant: Cliff Chic
If the five restaurants and bars at Blue Waters’ didn’t offer enough choice as it is, Blue Waters have now added a new addition to their culinary family: The Cove Restaurant. Elevating our expectations, literally, of Caribbean dining by adding a French twist to creations, the skilled Cove chefs will guide you through a journey of culinary surprise and discovery, courtesy of local suppliers, farmers and produce.
Picture the scene: after donning your gladdest rags, you’ll make your leisurely way from your room to the restaurant (smug grin in mirror at newly acquired tan, optional), guided by flaming torches to the dramatic entrance of the Cove. More banquet appropriate then a peaceful evening meal, the stunning candlelit hall awaits you, the enticing aromas from the bubbling pots and hissing pans of the kitchen lingering in the air above you. Once seated, allow yourself a moment to appreciate the breath-taking view out over the ocean before dragging your gaze to the menu in front of you. Not yet knowing you personally, we will leave the ordering up to you. However, if you may allow us to make a few suggestions (cue excited eruption of suggestions from others at the Blue Waters HQ), we loved the Linguine Vongole, served with mussels, tiny shrimp, sprinklings of parsley, tomatoes and luxurious garlic olive oil. We also got carried away with the Caribbean vibes and indulged in Coconut Shrimps, which we smothered in local pineapple curry mayonnaise dipping sauce. And the dark chocolate mousse (listed as dark mousse au chocolate on the menu) was just the cherry on top, the very smooth, airy cherry, smothered in Cappuccino sauce, on top. We know, our lips are smacking already.
From here on it its just smooth sailing as you sit back in iron wrought chairs, watching the sun set across the waters, reminiscing with old friends or getting up to speed with new ones, accompanied by an award winning wine list and a whole host of other alcoholic and non alcoholic treats.
